The story behind Austin's favorite mobile BBQ experience
Rolling BBQ started in 2018 with a simple passion - to bring authentic, slow-smoked Texas barbecue to people wherever they gathered. Founder Jack Wilson, a third-generation pitmaster, spent years perfecting his craft in some of Austin's most renowned BBQ joints before deciding to break away from tradition.
Instead of opening another brick-and-mortar restaurant, Jack purchased a vintage Airstream trailer, retrofitted it with custom-built smokers, and created a mobile BBQ experience that could bring the flavors of authentic Texas barbecue directly to events across the city.
What began as a single trailer with Jack and his cousin Thomas has since grown into a fleet of three custom mobile kitchens and a team of dedicated pitmasters and food service professionals. Despite our growth, we remain committed to the same principles that guided us from day one - quality ingredients, traditional smoking techniques, and exceptional service.

We primarily serve the greater Austin area, including surrounding communities within a 50-mile radius. This includes Round Rock, Cedar Park, Georgetown, San Marcos, Buda, and Kyle. For events beyond this range, additional travel fees may apply. Contact us for specific details about your location.
